Tasting Notes A rosé (from French: rosé also known as rosado in Portugal and Spanish-speaking countries or rosato in Italy) is a type of wine that incorporates some of the color from the grape skins, but not enough to qualify it as a red wine. It may be the oldest known type of wine, as it is the most straightforward to make with the skin contact method. It is a pretty simple process to produce a rosé. Some of the pink juice from the must can be removed at an early stage in what is known as the Saignée (from French bleeding) method. The pink juice that is removed is then fermented separately, and aged in neutral French oak barrels to produce rosé. We sometimes attempt to impart more tannin and color in our red varieties using the Saignée method. Thus, giving the must base more concentration and structure to develop over the lifespan of the finished wine. This is particularly effective in warmer climates and vintages where acids tend to soften out in the ripening process. In past vintages, we would simply dump the Saignée down the drain. No kidding. It was our assistant Winemaker, Michael Solari, who noticed with the 2011 vintage of Syrah, that the Saignée was simply an outstanding example of rosé, and held back one barrel’s worth. It was delicious! Such examples are rare and are not produced every year at Venge, as the vintage has to be just right. The 2012 vintage of old-vine Charbono and Estate Cabernet Sauvignon Saignée were noteworthy and blended to ferment a wine that is bone dry, racy with food cutting acidity, and a very flavorful finish. Chill in a bath of water and ice until frosty, pop the cork, and enjoy the day!

This has become our favorite Rose! Excellent and so good on a hot summer day. We ordered some during a visit to Venge then quickly went on to order a case. Light, crisp and full fruit flavors.
