"The 2011 Cabernet Sauvignon Silencieux is a much larger cuvee of 1,568 cases from top sources in Napa. Another big time winner, it is a delicious, reasonably priced Napa Cabernet Sauvignon that showcases Venge’s Midas touch with this varietal. Rich, concentrated, round and generous, this is a sumptuous Cabernet Sauvignon with no hard edges. Enjoy it now and over the next 10-15 years."
This wine opens with scents of, cassis, licorice, blackberries and coffee that lead to a concen-trated, full-bodied wine that showcases great length on the palate. Approachable upon release, and cellar worthy in proper aging conditions, fans of our Bone Ash Vineyard Cabernet Sauvi-gnon and our Family Reserve Cabernet Sauvignon will love this wine for its fruit concentra-tion, beautiful complexity, and streamlined structure. This is the fourth vintage of Silencieux (see-lens-see-oh) Napa Valley Cabernet Sauvignon and it is a delicious effort. This is largely the result of our vineyard selections for this year’s release. IN THE VINEYARD—5 DISTINCT NAPA VALLEY APPELLATIONS, 1 VARIETAL
VENGE’S CALISTOGA ESTATE “BONE ASH VINEYARD”: This alluvial bench vineyard is in a warmer appellation of the Napa Valley and is proving to be an ideal location for growing Cabernet Sauvignon. Now in their 24th leaf, the vines are dry-farmed and sustainably-farmed and provide sweet cassis, rich red fruit flavors, and elegance to the structure of the wine.
VENGE’S OAKVILLE ESTATE VINEYARD: A classic location set in the center of Oakville, this 27 year old vineyard sees warm days and cool nights that have made Oakville a desired appellation for growing Bordeaux varieties for decades. This location is 10 degrees cooler than our Calistoga Estate and provides wonderful blackberry, mint, and blue fruit notes and a subtle, complex herbaciousness to the blend.
H&H VINEYARD, Mount Veeder,: This cool climate, hillside location is 10 degrees cooler than Saint Helena, and 15 degrees cooler than Calistoga, on average. It provides classic Cab-ernet varietal characteristics of mint, blackberry, and cassis, along with the necessary back-bone and elegance we look for in our age-worthy Cabernets.
TEERA VALENTINE VINEYARD, Spring Mountain: This small vineyard stands in an ideal formation of volcanic rock. Bold, tannic, and packed with dark red fruit, it adds a perfect splash of body and color.
Food Pairing Notes
FRAZIER ESTATE VINEYARD, Coombsville Hills: Topped by Mt. George and Atlas Peak, the elevations in this area range from 300 to 1200 feet above the valley floor. Blanketed with volcanic ash, the terrain is lush to very rocky, with alluvial flows and cobblestones that hold water during the dry summer months, making for perfect dry farming conditions. Located near the San Pablo Bay in South-East Napa, this climate easily achieves optimum ripeness while retaining a fair amount of structural acidity that results in a plush, dark, brooding ele-ment to the core of the blend.
The fruit was destemmed into small stainless steel tank fermenters and open top barriques. Time on skins lasted 14 to 35 days. The fruit was then separated to “free run” and “light press” fractions. From then the new Cabernet was aged in 65% new, tight grained, French Oak barrels for 18 months. We employ a variety of cooperages for Cabernet including Boutes, Sylvain, Taransaud, Gamba and Alain Foquet. 100% native, spontaneous yeast and malolactic fermentations were also key ingredients in the making of this wine. The gentle use of gravity flow winemaking, whenever possible, is carefully exercised throughout the making of this and every Venge wine. At bottling, this bold red is neither filtered nor fined.
